Best Cupcake Recipe Ever – Vanilla Cheesecake Oat Cluster Cupcakes
Ingredients
• 2 cups all purpose flour
• 1 1/2 cups sugar
• 3 teaspoons baking powder
• 1/2 teaspoon salt
• 4 egg whites from large eggs
• 1/2 cup shortening
• 1 cup 2% milk
• 2 large eggs
• 1 1/2 teaspoon vanilla
• 1 container of cream cheese flavored frosting
• Some “Ancient Grains” cereal. (I think the hemp cereal would work well too!)You will also need: Cupcake pan, automatic mixer + cupcake paper liners. Whisk is okay, but not ideal. This stuff can get clumpy and clumpy is not yummy.
Vanilla Cupcake Recipe Directions
- Preheat oven to 350 degrees. Line cupcake pans with paper liners.
- Combine flour, sugar, baking powder, salt, shortening, milk and vanilla in a large mixing bowl. Mix at low speed for 2 minutes. Scrape bowl. Add egg whites (Important! No yolks!) and mix at high speed until fluffy and smooth, approximately 2 minutes.
- Fill liners 1/2 to 2/3 full of batter. Do not overfill. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean.
- Cool 10 minutes in pans then remove from pan, and place on wire racks to cool completely.
- Frost with the cream cheese frosting. Make sure it’s a generous layer.
- While the frosting is still gooey, top the cupcake with Ancient Grains cereal. Make sure you get some almonds on there, too. They really add to the flavor.
Breathe in. Breathe out. Draw.

I don’t have anything against the person who ran my workshop – but I almost gave up on TAG because I was told my GPA was counted from BEFORE the Fall semester. Nope – you have to have the required GPA AFTER fall semester. This makes a huge difference (for me). I’m literally going to be just at the 3.5 mark, so I don’t have to settle for a 3.0 GPA UC. Of course, I read this in the fine print – I’m not sure if they actually follow these rules, but I will fight for it if I get denied.

GPA and limitations
• You must earn a cumulative 3.5 minimum UC GPA earned by the end of
Fall term 2011 and maintained through the end of Spring term 2012.
My gut tells me I’m probably gonna be (attempted to be) screwed. But the fine print is on my side, I think. :/

Nice, it’s sunny again today.
Wish I was there to complain about how hot is it and go for a stroll in Herastrau park, as I’m sure rose island actually has roses this time of year.
The most amazing thing you’ve ever seen.

What is it? Is it a painting? Was it in a dream? Maybe it’s one of the seven wonders of the world, or maybe it’s something dull and unimportant, that just happened to jump out at you.
When I was seven, I saw the Grand Canyon, and as someone who was transplanted from a completely different climate, it was intense. And at the time, it was probably one of the most incredible things I’ve seen. (Although the faucets at JFK were a close second, that’s a story for another day.)
Less than a year after I saw the Grand Canyon, I saw the first large body of water in my life. It was the Pacific Ocean. I had seen pictures of seas and oceans, probably even drawn ones. But in reality, the seas can’t be described that way, mostly because they are and feel bigger than anything else in the world. They are endless (but they’re not.) They feel infinite. So the most amazing thing I have ever seen is the Pacific Ocean, at eight years old, in Southern California (where I would later come back to live.)
I’m okay with the idea that I might live farther from the ocean. It’s more of the concept that is comforting to me, and the fact that I know I will always return to this great unseeable, incomprehensible, water that i can never own, never grasp, and never understand. I want to live all over the world, but I’d like to die at sea. The waves will be here long after I’m gone, but the world will change.

I wonder if it would eliminate the license issues Pandora has. I admit sometimes I want to listen to like .. 50 seconds. But rarely more than that. I always get limits on Pandora because I skip too many songs. I wonder if it’s also because I’m an auditory learner and all the overflow of information causes the frustration from a song being too long or repetitive. But it doesn’t happen as often with terrible 80s music, jazz, or classical. Hm!

It’s mildly better now. I removed the slidey keyboard thing from my desk. My chair/legs doesn’t knock into my desk constantly anymore.

I also went back to using my Apple keyboard. It’s still frustrating to work on here though. If I get a monitor I don’t know how I’m going to organize everything. Especially since my laptop needs to be able to open for me to turn my computer on and off, though I could just constantly sleep it.
Although this is one of the first times my Cintiq is at a good height/angle for drawing.
